Terrior: Soil hilly terrain, mixed calcareous and chalky soil of medium texture. Altitude 250-400m asl, with a planting density of 5,000 plants/ha and a yield of 90 q/ha.
Vinification: Traditional red vinification, with maceration on the skins for 15 – 20 days at controlled temperature.
Ageing: 12 months in 110-hectoliter steel-French oak casks and a minimum of 13 months in bottle.
Tasting notes: Very wide-ranging spectrum of aromas, with notes of sour cherries and forest fruits, together with delicious hints of vanilla. Caressing and spicy, with firm, but graceful tannins. A wine that can be cellared over 10 years.
Temperature of service: Served at 16-18°C
Food Paring: Ideal with grilled meats, hearty pasta dishes, game, salumi, and aged cheeses
