Picolit DOC Collio 2019
Vinification: cold maceration of the destemmed grapes to extract aromatic compounds. Fermentation then occurs at controlled temperatures over approximately two months, a process carefully managed to preserve the wine’s delicate aromas and balance.
Ageing: refinement in small, fine durmast oak kegs for over a year. This ageing process enhances the wine’s complexity and depth, contributing to its distinctive character
Tasting notes: The wine presents an intense golden yellow, transparent hue. On the nose, it offers aromas of ripe acacia honey and vanilla. The palate is strong, full-bodied, and unmistakably sweet, with dry, mountain hay notes that add complexity
Temperature of service: At 10-12° in the summer and 14° in the winter in a long-stemmed glass which is shaped like a big, just-bloomed rose.
Food Paring: Picolit DOC Collio is best enjoyed as a meditation and conversation wine. It pairs wonderfully with foie gras, blue cheeses, and pastries, making it an excellent choice for indulgent desserts or as a contemplative end to a meal.
