Terroir: The soil at the base of the canal is red, clayey-calcareous, rich in skeleton and, not far from the vineyards, the calcareous rock emerges; while the roots of plants creep into the karstic cracks
Vinification: Whole-bunch fermentation in open vats using Burgundian “vendanges entières.” Malolactic takes place in second- and third-fill barriques and tonneaux. Extended maceration for approx. 50 days
Ageing: Aged for approximately 12 months on lees in barriques and tonneaux, followed by 6 months in bottle before release.
Tasting notes: Ruby red in colour, clear to the eye. On the nose, it releases aromas of fresh, crisp fruit, surrounded by intense spicy tones. On the palate, it reveals all the finesse it possesses, with elegant tannins accompanied by a good acidic presence. Overall, an atypical Primitivo, captivating for its complexity and elegance.
Temperature of service: Served at 16-18°C
Food Pairing: Best with rich meat dishes (beef, lamb, game), flavourful pasta, charcuterie, and aged cheeses.
