Terroir: Sedimentary calcareous soils, very fertile. Vineyard located on a ventilated hillside in Valle d’Itria at 431 meters above sea level.
Vinification: The grapes are de-stemmed, then cooled and brought to a temperature of about 6-7° C for a cryomaceration of about 24 hours, then the free-run must is removed from the skins, cleaned, and fermented in stainless steel tanks at a temperature of about 12-14° C kept constantly under control.
Ageing: The wine is aged in stainless steel vats and bottle before to be released into the market.
Tasting notes: Colour: straw yellow with greenish highlights. On the nose: it is complex with fruity aromas of pineapple, pear, yellow peach, floral acacia and minerals linked to the soil. On the palate: it is fresh and very balanced, with long persistence.
Temperature of service: Served at 8-10°C
