Vinification: after de-stemming and crushing, the fermentation is with maceration of the skins for about 20 days at 28°C. After a pouring, the malolactic fermentation is started and then the wine is kept in stainless steel tanks.
Ageing: it rests in bottle for a few months before release
Tasting notes: Colour is ruby red with garnet hints. Nose: intensely fruity with herbaceous notes. Taste: full-bodied, fresh and balanced, soft tannin and with a good persistence.
Temperature of service: Served at 18°C
Food Pairing: It’s an all-purpose wine, ideal with pasta dishes, white meats, and traditional Piedmontese fare such as vitello tonnato, tajarin with ragù, agnolotti del plin, and mixed boiled meats (bollito misto)
