Vinification: all varieties are vinified separately; fermentation and maceration took place in stainless steel tanks for roughly 20-25 days at a controlled temperature that never exceeded 28° C. It then goes under malolactic fermentation

Ageing: 80% of the wine aged in 500-l French and Austrian oak tonneaux while the remaining 20% in 225-l French oak barriques. The wine then refined in the bottle for 6 months

Tasting notes: Bright red ruby colur. Nose: Ripe berries, blue fruits, oak, coffee, dark   spices, marmalade, carob, chocolate, rosemary, almond paste, liquorice, eucalyptus.      Flavour: Soft, elegant, fresh-savoury balance, smooth tannic texture, fruity notes of plums, crisp mint, wild Mediterranean scrub with a long balsamic finish, clear lingering   finish, long persistent aftertaste.

Temperature of service:  Served at 18-20°C

Food Paring: Ideal with grilled meats, game, hearty pasta dishes, and aged cheeses.

Terroir: The vineyard sits at an altitude of 30 to 80 meters above sea level with a northern exposure. The soil varies from continental-type sands in the lower areas to transitional soils at higher elevations, which include Lower Cretaceous flysch composed of limestone, marl, shale, sandstone, and siliceous cobbles. Aspect: North, with a small portion facing South. Density: 6,000 vines/Ha, yield 70 quintals/Ha
