Vinification: In about late February, the dried grapes are pressed, and the must is left to ferment in small oak casks until the following year. This refining process continues with the wine maturing on its own yeasts in oak casks.

Ageing: The wine matures in oak casks for at least 3 months and is only completely ready after a further minimum of 3 months of bottle ageing

Tasting notes: Colour: golden-yellow. Nose: Fine and spicy aroma with scents of     vanilla and honey. Flavour: Warm, ripe, with caramel traits and slightly almond.

Temperature of service:  Served at 10-12°C

Food Pairing: Ideal with desserts such as fruit tarts, almond pastries, blue cheeses, or enjoyed as a dessert on its own as a meditation wine.

Terroir:  Altitude 110-250 m asl, with a southeast exposure. The average vine age is approximately 20 years. Soil volcanic hills of basaltic origin in Castelcerino, in the Menini area. Once an almond grove, the land is now home to thriving Garganega vines. Yet, the deep roots of the ancient almond trees continue to leave their subtle mark on the wine’s character. The unique combination of past and present lends the wine delicate and intriguing aromas, with hints of dried fruit and a gentle almond undertone. This rare connection between the soil and its heritage creates a truly distinctive tasting experience.
