Chianti Classico DOCG

Vallenuova Chianti Classico DOCG is crafted from 95 % Sangiovese and 5 % Canaiolo, sourced from the estate’s historic Vallenuova vineyard. Grapes are selected twice — first in the vineyard and again at the winery via optical sorter after destemming. Fermentation is temperature-controlled, with roughly 20 days of skin contact. Aged for 10 months in a combination of Tuscan, Slavonian, and Austrian oak casks, the wine then spends about 4 months aging in the bottle before release.

This expressive wine reveals aromas of black cherry, black currant, spice, leather, and hints of earth. It is plush and balanced, finishing long, fresh, and tobacco-tinged with elegant tannins

VINIFICATION

The grapes are harvested by hand, with a first selection made in the vineyard and a second selection carried out at the winery using an optical sorter after destemming. Whole berries are transferred to stainless steel tanks for temperature-controlled fermentation, where they remain in contact with the skins for approximately 20 days. During this period, remontage is performed every eight hours and delestage once a week to ensure gentle extraction of colour and tannins. The wine is then aged for ten months in a combination of Tuscan, Slavonian, and Austrian oak casks before being bottled, followed by an additional four months of bottle ageing prior to release.
